Late Night Chicken

Last night I cooked a chicken and it came out really well.  It's only the second whole chicken I've ever made and both times we just stood at the counter and ate it mostly with our hands.  The Manfridas of Boston are incredibly civilized.

For stuffing I just used onion, celery, rosemary and a lemon.  Then I rubbed the outside with olive oil along with a mix of salt, pepper, rosemary, thyme and garlic.  The skin came out nice and crispy, the meat inside was super moist and it had a slight rosemary and lemon flavor to it.  So perfect.

I tend to cook without solid recipes, as I'm sure you can tell by now if you are a regular reader of this blog, but I did refer to the post I wrote about the first chicken that I cooked (here).  Ha ha!  I set the oven to 400°F and left it in for an hour and a half.
