Hi everyone! Once again my #TastyTuesday post is going up on a Wednesday but yesterday was my birthday and I didn't quite get around to writing it up! :) My mom came over with a birthday cake and presents and she even made us dinner and washed about 1000 dishes! If the joy of someone else doing your dishes doesn't scream 34 then I don't know what does! Haha Anyway, no cake in this post because this is what I ate on Monday
Steve has been making overnight oats for us a couple of times a week so I had that along with a glass of water and a couple of cups of coffee.
Overnight Oats Ingredients:
1/2 cup (heaping) oats
2/3 cup almond milk
1/3 cup yogurt
Flax seed (ground)
Raisins (he sometimes swaps this for berries or banana or whatever we have)
*Put in fridge at night, take out and eat in the morning!
I made an egg salad sandwich with one and a half eggs because I gave Harold one of the yolks to eat, which he really seems to like. I had some tomatoes and cheese on the side.
This was our pre-dinner snack. Steve and I had chips and hummus, Harold had a little hummus and I had some kefir.
Dinner was a giant bowl of chicken stir fry with udon noodles. We were using up veggies so this had onion, garlic, carrot, celery, and bok choy in as well as crushed cashews.
And with that the Easter candy is finally gone! We split this chocolate bunny and these peanut butter cups and called it a night.
