Shrimp Pesto

I read Michele's post about eating breakfast for lunch the other day while I was thinking about what to make for supper.  She used pesto in her meal and since I was hungry.... Luckily I remembered that I recently bought pesto.  This is what I came up with.  Thanks for the food inspiration, Michele! :)

Ingredients:
Shrimp
Spinach
Pasta
Butter
Garlic
Pesto


Shrimp cooks really quickly so my suggestion is to start the water and wait until you throw the pasta in to actually start cooking everything else.  I used brown rice pasta, which usually takes a little longer to cook than traditional pasta so the timing was perfect.

I only used about a tablespoon of butter to cook one pound of shrimp.

When the shrimp is mostly pink, and therefore almost done, add the garlic and some pesto.  I started with two spoonfuls because I wasn't sure how much I'd want/need once everything was in the pan.

Just before the pasta is finished cooking, add the spinach to the shrimp. This is when you can decide if you need more pesto.  I put another big spoonful in mine.

The spinach will cook down and you can pile it all up in the middle of the pan to soak up the flavor and stay warm while the pasta finishes.  Then put your pasta in a bowl, pile the shrimp on top and dig in.

This meal is nice and quick.  It's a way better weeknight meal option than the lasagna I cooked on Monday!  Ha ha!  The time it takes to boil water and cook the pasta is literally the amount of time it takes to make this meal.  If I wasn't taking pictures of everything I would have peeled the shrimp while the water was boiling (I always get the EZ Peel shrimp) but since I was taking pictures it took me a teeny bit longer.  Also, I always get jumbo shrimp because then as it cooks it curls up in the pan and gets small and bite sized.
